Through these cells, nutrients such as carbs, fatty acids, and protein are carried to other areas of the body through the blood. Eating gluten triggers the body to attack its intestines in people with celiac disease, a condition known as autoimmune. The villi may become flat and lose the area they need for absorbing nutrients as a result of this damage.
