Define Surface Sampling

Food contact surfaces (e.g. storage tank, packaging material, ripening room, utensils, equipments, refrigerators etc.) which directly or indirectly (walls, floors, enclosures, workers' garments) contact the food may result in its contamination. Therefore, maintenance of hygienic state of these surfaces is must.
