What is the chemical nature of carbohydrates?

The name carbohydrate owes its origin to the fact that most substances of this class have empirical formulae suggesting that they are hydrates of carbon in which the ratio of carbon, hydrogen and oxygen atoms is 1:2:1. Although most carbohydrates confirm to this formula, many others do not show this ratio and some also contain nitrogen, phosphorus and sulphur.
