Q. Show the techniques of preservation?

The various methods can be used for preservation of foods. Some of the common methods employed to preserve foods are summarized herewith:

• Heat (blanching, pasteurization, sterilization...)

• Cold (chilling, freezing etc.)

• Drying (partial or fully)

• Acid (fermentation, addition)

• Sugar and salt (addition- osmotic effect)

• Smoke (heat + smoke, formaldehyde and others)

• Atmospheric conditions (O2 or CO2)

• Radiation (X-ray, UV, microwaves, ionizing)

• Chemicals (preservatives)
