Risk Assessment of Biological Hazards
Biological hazards of concern to public health include pathogenic strains of bacteria, viruses, helminths, protozoa, algae and certain toxic products they may produce. Among these, presence of pathogenic bacteria in foods presents unique features for risk assessment. The method used to assess the risk of hazards from food borne bacteria will be complicated by factors measuring from methods used to grow, process, store and prepare food for consumption. These can vary greatly depending upon the cultural and geographical differences. Let us look at the four steps involved with risk assessment of biological hazards.
