Explain about the Commercial Sterilization?

Sterilization is the most extreme heat treatment given in preservation of food by heat. Usually target organism is a heat resistant pathogenic microorganism, most often a spore or schlerotia forming organism rather than a vegetative one. Common examples include Clostridium botulinum-a spore forming anaerobic bacteria and Putrefactive anaerobe. The basic characteristics of these microorganisms are highlighted in box.
