Drying - Chemical Properties of oils and fats

Some fixed type of oils, containing glycerides of unsaturated fatty acids comprising two or three double bonds have the trend of slowly absorbing oxygen from atmosphere and going through polymerisation to form hard transparent coating. This method is termed as drying and such oils are known as drying oils. Unsaturated oils like linseed oil are, hence, used as medium of paints and varnishes.
