Ionic compounds dissolve in water because the polar water molecule pulls apart the ions of the ionic compound. This process is called ionization For example, NaCl ionizes in water when it breaks up into Na+ and Cl- ions.
Compounds whose aqueous solutions conduct electricity are called electrolytes.
On the other hand, some substances dissolve in solution and do not ionize. They simply break up into their neutral molecules and become surrounded by the molecules of solvent.
Compounds whose aqueous solutions do not conduct electricity are called nonelectrolytes. They are nonelectrolytic because they do not contain charged particles to carry electric current. For example, sugar dissolves in water but does not ionize.
