Briefly discuss the Salmonella food infection.

• Salmonella food infection is caused by Salmonella gastroenteritis.

Transmitted by faecal contamination of foods.
Incubation period 12-36 hours.
Symptoms: nausea, vomiting, diarrhoea, abdominal pain and green
About 10⁶-10⁹ organisms must be ingested to cause infection.
Salmonellosis prevented by: prevention of contamination of food by Salmonella, avoiding intake of contaminated food and by destruction of organism at 66⁰C for 12-15 min.
