Briefly discuss the Salmonella food infection.

• Salmonella food infection is caused by Salmonella gastroenteritis.

  • Transmitted by faecal contamination of foods.
  • Incubation period 12-36 hours.
  • Symptoms: nausea, vomiting, diarrhoea, abdominal pain and green
  • About 106-109 organisms must be ingested to cause infection.
  • Salmonellosis prevented by: prevention of contamination of food by Salmonella, avoiding intake of contaminated food and by destruction of organism at 660C for 12-15 min.
