As you read in this Module, food has moved from place to place for millennia, first as crops that may have been carried as seeds as people migrated to new locations, and now as packaged prepared foods from around the world that you can buy in the freezer section of Trader Joe's to heat in your microwave oven. Food movement has contributed to rapid population growth (example: the potato as a result The Columbian Exchange), and the desire for new foods has been a driving force behind slavery, tooth decay, and probably obesity (sugar). Today, food cultures have undergone radical change. On balance, is this good or bad? Do we lose something with global dietary convergence ?
