CASE - WEAK LINK Pascal Gateau - Executive Chef Jenifer Ortiz - Restaurant Manager

  • Matthew Knorr - Director Food and Beverage

"Service was really subpar today." Chef Gateau told Matthew after dinner service. Jennifer walked in to the chief's office and over heard him.

"Chef could you share a little glory with the front house please?" Jennifer asked.

"There is no secret here Jennifer. All I want is to get another diamond for the restaurant," chef replied.

"I know chef. We discussed it a couple of times," Jennifer said and walked away.

The next day, Jennifer went to see Matthew to talk to him about what is going on between the two departments. She quoted the chef saying, "The main stumbling block to restaurant nirvana is the front house." Jennifer explained to Matthew how much she admires and respected the chef but, at the same time, she has the feeling that the service is blamed for all errors, as if a 45-minute wait for entrées was the server's fault. Matthew promised her that he would deal with the situation.

QUESTIONS:

  1. Describe the problem behaviour.
  2. Identify potential reasons for the difficult behaviour.
  3. Highlight some of the consequences that the problem behaviour has on others.
  4. How do you think Matthew should deal with the chef?
