Activity - Validate the FSP role-play

Purpose
For this task, students must evaluate and revise food safety program by conducting a scheduled review of food safety program in consultation with colleagues, validating the required food safety controls, review policies, procedures, product specifications, monitoring systems and record keeping methods.
Role and participants
Operations Manager
Assume that you are the Operation Manager. You are responsible for making strategic decisions on establishing and monitoring risk control systems for food related hazards and as Feast of Flavours is a small restaurant you are also the food safety supervisor having completed the required training.
Staff member acting as the food safety inspector
For the purpose of this activity the food safety inspector will be your Trainer/Assessor.

Tasks to be performed
Conduct an internal audit and complete the checklist developed in activity 6.
For the purpose of this activity the workplace can be the RTO kitchen or your workplace, but your Trainer/Assessor needs to observe you conducting the audit. Get It Done Today!
There must be one uncontrolled hazard identified during the internal audit and the severity of the hazard must be determined and acted upon.
