What is a pigment? 

Scientifically, a chemical that can impart colour and is insoluble in the solvent in which it is used, is referred to as a 'pigment'. Well, you would agree that colour has a remarkable influence on food selection, consumption and overall enjoyment. Although the colouring of foods with natural compounds is considered to be desirable for various reasons, their use is limited at present.
