The rich heritage of India contributes to wide range of traditional foods and has a role to play in health foods. Indigenous meat products are unique in their spicy flavour, simplicity and ease of preparation. They have the potential of becoming value added convenience products of good palatability. Popular indigenous meat products are seek kebab, shami kebab, tikka and kofta etc. Some of the variety meats are used in traditional manner. Addition of food additives like polyphosphate significantly enhances the yield, quality and acceptability of many traditional products irrespective of meat handling conditions.
