Saponification value - Analysis of oils and fats

It is quantify of fatty acids denote as esters in oils and fats. It is described as the number of milligrams of KOH needed to saponify one gram of the oil or fat or number of milligrams of KOH needed to neutralize the free acids resultant from the hydrolysis of one gram of an oil or fat. It is illustrated by refluxing a Saponification number of fat or oil

            = 168000/M, Where  M stands for molecular mass
