Necessary Precautions for Quick Vinegar Process

In this process, the following precautions are necessary:

a. The concentration of the ethyl alcohol could not be much more than 15%, or else the bacteria becomes inactive.

b. The supply of air has to be regulated. Along with less air the oxidation occurs only upto acetaldehyde stage when with excess of air, the acid is oxidised to CO2 and water.

c. The flow of alcohol is regulated that is why temperature does not exceed 35°C that is the optimum temperature for bacterial growth.
