Explain Xanthan Gum
Xanthan gum is a microbial polymer prepared commercially in pure culture fermentation from Xanthomonas campestris. This polysaccharide was given the generic name xanthan gum. Xanthan gum, as shown in the figure 2.13, comprises of β-1 →4 linked glucan backbone and trisaccharide side chains consisting of β-D-mannose, β-D-glucuronic acid and 6-O-acetyl-α-D mannose. Pyruvic acid is linked to β-D-mannose as sugar ketal.
