Food Applications of hemicelluloses
The hemicelluloses find their application in food systems as emulsifer, stabilizer and binder in flavor bases, dressings and pudding mixes. These may also be used as a potential bulking agent. These are good source of dietary fiber and stimulate the immune system. Its properties suggest usefulness as a low-viscosity thickener and / or emulsion stabilizer, for eg. corn oil / water emulsions are stabilized by corn fiber gum.
