Pullulan

Pullulan is a water soluble edible microbial polysaccharide consisting of Maltotriose units (α 1 → 6), as shown in  the figure 2.12. It is produced by yeast  Aureobasidium pullulans. It is a natural linear polysaccharide with maltotriose units. Pullulan is tasteless and odourless.  Esterification of pullulan makes it water-soluble. The films made from this are odourless, impermeable to oxygen and resistant to grease. It cannot be degraded by human digestive enzymes and thus can be exploited in dietetic foods.
