Explain Cultivation of microorganisms

It is for  the production of food colourants has attractions, these must be measured against the financial legislative and user constraints. It is desirable, that the microbial cultures which produce colourants would have to be proved pathogen free and also free from any toxic components.  There is still no substantial evidence to suggest that the pigments from Monascus are superior to other natural colourants. Potentially its orange or red colour is suitable for food use, its long usage in Oriental foods is also in their favour and the property of reacting with amino-containing compounds suggests that they could easily be incorporated into food systems. They appear to be stable in the pH range 2-10 although below pH 2, precipitation occurs on standing.
