Carrageenan

Carrageenan is a collective term for polysaccharides prepared by alkaline extraction (and modification) from red seaweed (Rhodophycae). Carrageenan is a sulfated galactose polymer. It's a β-D-galacto pyranose linked glycosidically through positions 1 and 3 to α-D-galactopyranose residues linked glycosidically through positions 1 and 4, as illustrated in the figure.
