Natural Gums

These are derived from various plant as well as microbial sources and are divided into the following four basic categories:

1.  Seaweed gums:   Agar, Alginate, Carrageenan

2.  Tree extracts:  Gum Arabic, Gum ghatti, Gum karaya, Gum tragacanth.

3.  Seed or root gums: Guar gum, Locust bean gum

4.  Microbial fermentation gums: Xanthan gum, Pullulan, Dextran, Curdlan
