Define Factors Influencing RS Content of Foods?

Different fractions of RS mentioned in Table may be naturally present in some foods or may be generated as a result of industrial or home level processing. The amount of RS produced is influenced by several factors. As we will see in this section those inherent properties of food, ingredients added during processing, as well as, different processing techniques influence the RS content of the food.
