(b) What is "brewing" in the production of beer?

(a) Champagne is a sparkling wine produced by inducing the in-bottle secondary fermentation of the wine to effect carbonation. It is produced exclusively within the Champagne region of France from which it takes its name.

(i) Outline through a chart the 10 steps in the champagne making process.

(ii) What are the 3 main cépage which form the composition of the champagne? Briefly outline their characteristics.

(b) The 5 major types of spirits are: grain spirits, plant liqueurs, fruit liqueurs, liqueurs and bitters.

(i) List 3 grain spirits.

(iii) Briefly describe the composition of each of the above grain spirits.

(iii) List 2 classical cocktails made from each of these 3 grain spirits.
