At Anthony’s restaurant its extremely important to us that customers are satisfied and have a wonderful experience. We want customers to leave knowing they have found their new home for pizza and all things Italian. Currently our restaurant of 20 tables is run based on 3 cooks,2 servers, 1 dishwasher and a cashier. Normally that is enough employees and we can pay ample attention to our customers, keep wait times down and keep satisfaction high. However, when we have rushes like lunch for example things can get hectic. Using our current process our two servers are equally in charge of the customers and pool their tips. At our restaurant when a customer walks in they are greeted by the cashier and instructed to have a seat. One of two servers will take their orders, place their order, the cook then prepares the food, a server brings the food to the table, gives the customer their checks to bring to the cashier and then busses the table placing all the dishes in the back to later be collected by the dishwasher. Under the current system doing rushes and busy hours, confusion can quickly arise considering that no server is responsible for a certain table. This means that tables often get ignored and orders often get messed, since one server isn’t sure if another server has already waited on the guest. Our hopes in running this simulation is that we can see how wait times would be affected if each server was responsible for their own section of tables.
