This should be ok for a topic. For the techniques we are learning you will need a continuous outcome - so I suggest your main outcome is "Age" at death, and then you can compare if there is a different age on average for the different mortality causes (or possibly between towns which would also be interesting). In most cases I am suggesting people collect a sample of about 50 participants, but your topic is a little different and I think you will need a much larger sample. However, your collection will be quicker as you will just be reading off the information already provided and won't need extra tasks or surveys. For each person you will need to record: age at death, reason for death, gender, town, year of death. The sampling you propose sound fine.
