Cocktail Assignment
Overview:
More and more lounges and restaurants are recognizing the benefits of creating an in-house cocktail program.
This Purpose of this assignment is to provide you a deeper understanding of the local cocktail scene in Victoria as well as to research and understand the core components of a well-constructed cocktail.
You and your team will demonstrate your ability to construct a cocktail and demonstrate this to others. There are two elements to be submitted for this assignment:
a written report (with two parts)
a "how-to" video.
Written Report Part One: The Bar Visit
Research a bar, lounge or restaurant in Victoria. Focus on those that have a public bar -preferably one with bar seating and one that has an in-house cocktail program.
There are several independent restaurants, such as Olo, Little Jumbo or Stage that offer this. Classic cocktail lounges can be found in most of the hotels around town -this includes Veneto at the Hotel Rialto, Clives at Chateau Victoria, The Pacific at the Hotel Grand Pacific and many, many more.
Also you have several bars around town including the Penny Farthing and Cactus Club Cafe.
Pick a time to this establishment - preferably at a time that is less busy. This may provide you the opportunity to speak to the staff/bartenders a bit about the art (and science?) of constructing cocktails.
Review the cocktail list and order a cocktail (with alcohol) OR mocktail (no alcohol). If they do not have a cocktail list, then talk to the bartender or server about feature drinks (or mocktails), what your preferences are, and what they might recommend. The purpose of this is NOT to have a cocktail or drink that you are familiar with, but to try something new and different.
Request information & recipe from the bartender
o Ingredients - including measurements and brands?
o Method?
o Glass and garnish?
o Is there a story or history behind this drink?
Consume drink - record/critique
o Sweet/Savoury?
o High alcohol feeling / integrated?
o Like / dislike? Why?
Provide a written report on the venue, bartender/staff comments about drink construction, the cocktail menu in general and the drink you ultimately decided on, in this section of the report.
Written Report Part Two: The Custom Cocktail
Go online and research as much as you can about the construction of cocktails. Summarize and report back on a minimum of three sources
o What is (are) the key elements of a well-constructed cocktail?
o What techniques can you use to determine the kinds of ingredients that might go well together?
o What kinds of elements can be made "in house" that will provide a unique experience to your guests?
This portion of your report should provide a summary of a "framework" that could be used to construct an original cocktail; something that could be included on the made-in-house cocktail menu of your cocktail lounge or restaurant and be considered a unique or signature item.
Once you have provided the groundwork for the creation of a cocktail - its s time to get creative.
Your ultimate goal is to create your own unique cocktail. Take all your research, and personal ideas, and combine these together to develop a cocktail recipe that you believe would result in a successful final drink.
There are only a few ground rules:
o Your drink must include a minimum of three core ingredients - not including syrups, garnishes and accent items such as bitters.
o The only soft drink that is permitted is soda
The college has set aside both vodka and white and dark rum for you to create your own infusion if you want to. These must be made and stored in Dunlop House, under the supervision of your instructor.
Post Research Video
Using the Dunlop Bar create a video of someone from your team making the cocktail, explaining/discussing/demonstrating the following:
The name of your original cocktail (and how you arrived at it)
The ingredients and method of making the drink
Actual construction of the cocktail
A brief explanation of why these particular ingredients/element should work well together.
