Gelatin is processed collagen that comes from the joints of animals. Collagen is a stable protein consisting of a triple helix - three polypeptide chains wound around each other. When gelatin is mixed with hot water, the triple helix structure unwinds and the chains separate becoming random coils that dissolve in the water. As the dissolved gelatin mixture cools, the collagen forms a matrix that traps water; as a result, the mixture turns into the jiggling semi-solid mass that is recognizable as Jell-OTM. The directions on a box of gelatin include the following: "Chill until slightly thickened, then add 1 to 2 cups cooked or raw fruits or vegetables. Fresh or frozen pineapple must be cooked before adding". If the pineapple is not cooked, the gelatin will not set properly.
Pineapple belongs to a group of plants called Bromeliads. Pineapple contains a protease called bromelin. Proteases hydrolyze peptide bonds.
Explain in about 3 sentences why pineapple must be cooked before adding to gelatin.
Discuss the relationship between the proper functioning of enzymes and the tertiary structure of proteins
Based on the steps occurring in an acid-base reaction, which definition of acids and bases is most practical
Assuming the enthalpies are equivalent to free energies (they arent, but lets make the assumption for the moment), what are the equilibrium constants for the two equilibria in the gas phase?
In the following experiment, a coffee-cup calorimeter containing 100. \rm mL of \rm H_2O is used. The initial temperature of the calorimeter is 23.0
A volume of 95.0 ml of H2O is initially at room temperature (22.0 C). A chilled steel rod at 2.00 C is placed in the water. If the final temperature of the system is 21.1 C .
Table salt is comprised of sodium (symbol Na) and chlorine (symbol Cl) in a simple one to one ratio. It is written in chemical shorthand as NaCl. How would you go about finding approximately how much salt there is in our body?
N2O3(g) N2O(g) + O2 (g) Kc= 4.00 at the same temperature. When 4.00 mol of N2O5(g) is heated in a 1.00-L reaction vessel to this temperature, the concentration of O2(g) at equilibrium is 4.50 mol/L
A 494 mL sample of hydrogen gas was collected over water at 25°C and a pressure of 753 torr. If the pressure of water vapor is 24.0 torr at 25.0°C, what mass of hydrogen gas (g) was collected? Do not enter units with your answer.
Fructose contains only C,H, and O. 17.1g of carbon dioxide gas and 7.26 g of water vapor were produced when 12.1 g of solid fructose were combusted with excess of oxygen gas.
The following reaction takes place when some drain cleaners are added to water. What mass of hydrogen gas will be produce from 4.76 g of aluminum and 3.23 g of NaOH- 2Al(s) + 2NaOH(s) + 6H2O(l) -> 2NaAl(OH)(aq) + 3H2(g)
It takes 2 26 kilojoules of energy to evaporate each gram of water suggest a way to include the evaporated water in your calculation.
