Although in theory distilled water must have a pH 7.00 this is merely observed in systems where the water has been purged of all dissolved gases as well as is kept isolated from the surroundings. Carbon dioxide gas in particular-perhaps as exhaled by the person using a pH meter- will lower the pH of distilled water to less than pH 7.
