Now, in this practical, we shall deal with the endogenous and exogeneous microorganisms which are present on the food as contaminants. We know that these contaminants can lead to the spoilage of food and food borne illnesses. Hence, we need to become familiar with different sources of microbial contaminations and the ways for their detection and enumeration to access the quality of food and sanitary conditions maintained during food production.
