Processed food is gaining importance as "commercial commodity". It becomes more evident when we see the wide range of packaged food products available in the market. Increase in popularity of processed foods can be traced to several causative factors: growing urbanization, changes in lifestyle, increasing number of nuclear families, working women and the purchasing power. Food industry in India is broadening its product range in response to emergence of wider clientele range.
