Carbohydrate digestion begins with the action of the salivary amylase (ptyalin) in the mouth and it continues in the duodenum by the action of the pancreatic juice, this juice contains the enzyme pancreatic amylopsin or amylase that breaks starch (amylum) into maltose (a disaccharide made of two glucose molecules).
