Emulsions are classified as:

• Oil-in-water emulsion: This is a colloidal dispersion in which droplets of oil are dispersed in water. Example is mayonnaise.

• Water-in-oil emulsion: This is a colloidal dispersion in which droplets of water are dispersed in oil.
