Explain the Explosion Puffing?

Explosion puffing has been recognized as one of the most significant developments in dehydration technology. In explosion puffing, partially dehydrated pieces from a preliminary stage drying are heated in a closed rotating cylindrical container known as a ‘gun' until the internal pressure has reached a predetermined value. When this point has been reached the gun is discharged instantly to atmosphere. During this process a certain amount of water is vaporized but, more important, the explosive or flashing conditions cause a highly porous network of capillaries to be developed within the particles. This porosity enables the final dehydration to be achieved much more rapidly (approximately twice) than would have been the case with conventionally dried products. It also bestows on the product the ability to reconstitute extremely rapidly.
