Explain Functions of Gastric Juice - Digestive function

As the gastric juice contains water, it further liquefies the food swallowed. The hydrochloric acid acidifies the stomach contents and terminates the action of salivary amylase (ptyalin). Pepsinogen is converted to active pepsin by hydrochloric acid.
