Explain Beef Extract and Yeast Extract

These are aqueous extracts of lean beef and brewer's yeast, respectively. Beef extract provides amino acids, peptides, nucleotides, organic acids, vitamins and minerals. Yeast extract is a source of vitamin B, nitrogen and carbon compounds.
