Adsorption - Colloidal particle
Colloidal particles attract and hold to their surfaces the molecules of various gases, vapors and other matter with which they come into contact. This phenomenon is called adsorption. Adsorption plays a very important part in the character of the colloid .By adsorption the particles acquire an electric charge which governs the stability of the colloid. The phenomenon of adsorption finds widespread application in food preparations.
