Explain about the Methods of Food Processing?

In the earlier unit we learnt about the principles and traditional methods of food processing. Now in the next two units we will find a detailed discussion on the different methods used today for food processing. Canning, dehydration, freezing, microwave processing, irradiation are common food processing methods used at home or at the industry level. Canning as a thermal processing method has been used for long. What does the process entail? What are the other thermal processing methods? These issues are discussed first in this unit, followed by a descriptive write- up on dehydration - one of the traditional methods of food processing. Freezing, microwave processing, irradiation and fermentation.
