Explain about the Dehydration or Drying?
The technique of drying is the oldest method of food preservation practiced by mankind. The removal of moisture, which is actually dehydration or drying, prevents the growth and reproduction of microorganisms causing decay and minimizes many of the moisture mediated deterioration reactions. Further, removal of moisture brings about substantial reduction in weight and volume, thus minimizing packing, storage and transportation costs and enable storability of the product under ambient temperatures.
