Locust Bean Gum

Locust bean gum (also called Carob bean gum) is extracted from the seed (kernels) of the carob tree (Ceratonia siliqua). Structurally, locust bean gum is composed of Galactomannan galactose: mannose in a ratio of 1:4.  Have a look at the figure which indicates β-linked mannan (1 → 4) linkage and a side chain α (1→6) linkage.
