In food, most copper is present as Cu2+ and some as Cu1+. This copper is bound to organic compounds especially protein. Gastric HCI pepsin and some proteolytic enzymes aid in the .release of copper. Released copper forms soluble complexes with amino acids, organic acids and other chelators which are readily absorbed mainly in the upper intestinal tract. Some copper is also absorbed from the stomach; however, gastric, copper absorption contributes relatively little to the overall absorption.
