The measurement of temperature using a thermocouple relies on Seebeck effect.

The electrons occupy different energy levels in different materials (due to different chemical potential or Fermi level). If two different metals are in contact the electrons will flow. Note that the probability distribution function of electrons depends on temperature.
If both ends of conductors A and B are joined together, two intermetallic contacts are formed.
