To increase potassium intake in the diet. Potassium intake in the US is 1/2 of the recommendation. Look back on your Dietary Analysis project and see how close you were to meeting your DRI for potassium. (Most of you fall short of meeting even 75% of the DRI). There is a strong correlation with low potassium and high sodium intake. As sodium intake increases, potassium intake decreases. Adequate potassium is associated with a lower risk of high blood pressure, stroke and heart disease. Therefore, increasing potassium in the diet is encouraged. The best sources of potassium rich foods can be found in unprocessed foods. Fresh fruits and vegetables are your best choice.  This activity will help you to identify potassium rich foods and see just how easy it is to meet your DRI for potassium each day if wise food choices are made. 

Instructions:

  1. Write  your personal DRI for potassium from the Diet Analysis profile or the front of your textbook.
  2. Write, a day's worth of potassium rich foods that would meet your DRI. Be sure to include the portion size and mg of potassium in each serving AND the total potassium for the day.
