Many local parks are constantly working to improve their facilities. This can include the removal of exotic species, trail repair, etc. Also, there are environmental groups that identify specific environmental stewardship activities that need volunteers to help pick up trash, plant trees, etc. You can identify one of these volunteer opportunities and participate in the activity (keep in mind that if you get rained out or cancelled for any reason, you still have to submit a completed project...). Once finished, write a short paper describing the activity you engaged in, the reason it needed to be done, and what you learned/gained from the experience. Please note that this volunteer opportunity should occur during the semester, and it can be submitted at anytime during the semester. Your paper should be a minimum of 2-3 pages, and your volunteer opportunity needs to have occurred during the semester.
