I think it is problematic to use gender-specific words like the examples of "policeman" and "waitress". The reason is these words are reflecting stereotypical descriptions of roles that are appear to be male or female exclusively. This is considered to be sexist language; men and women are human beings that both work in these jobs. If a person is of that gender that you are inquiring about whether it is a man or woman you could address them as a policeman or policewoman. A better word to describe a “policeman" is to refer to them as a “police officer”. Instead of using the gender-specific words “waitress" or “waiter” the phrase that could be used would be “server”. When talking about certain gender-specific roles it is best to use nonsexist language; this could be considered unprofessional and offensive to some by labeling them as man or woman, referring them to people/human is a better choice of words.
It seems that these gender-specific terms are becoming less common. Can you think of examples and the words that have replaced them?
