Sensor Specifications using a USB 6001

I need to know the compatibility and set up of the sensors on the attached document using a NI USB 6001 for an aquaponics system design. I need to understand how the sensors will interface with the USB 6001. Also, is the Maertron module a signal conditioner for the Maertron thermocouple and what is the resulting signal?
