The preservatives avoid spoilage of food because of microbial expansion. The most common preservative employed is sodium benzoate; C6H5COONa It is metabolized through conversion to hippuric acid, C6H5CONH CH2COOH that finally is excreted in the urine. Salts of sorbic acid & propionic acid are as well employed as preservatives.
